Making pesto

We explored the idea of taking a pesto making class but didn’t really want to pay $175. So, we googled it, bought the ingredient and did it ourselves for a fraction of the price and what I’m sure was an equally amazing experience. After all, I hiked to town in record time, by myself, so there was an element of adventure too. (Scott’s knee was bothering him so he stayed back.) Our Airbnb has a mortal and pestle so we did made it the old fashioned way. It was quick and easy to make and THE MOST AMAZING treat. We sat on our terrace, enjoyed the views, the wine and the fresh, homemade pesto. As we we were finishing, the owners of the vineyard surrounding our house, paused from their work and chatted with us for a good long time, sharing what he was doing to prune the vines, telling stories from his childhood visit to the U.S. and making recommendations for things to do.

This might have been the best food I’ve ever made and eaten. But maybe the views helped.
